    Pale lemon-gold colour. Deeper colour than most other Finos I have seen. Lifted and very fragrant nose, complex aroma. I pick up mainly green apple skin but also sea water, sawdust and flor. In the mouth it is bone dry but has a bit of body, Complex, mineral, savoury, almost salty mouth. Difficult to pin down the flavours but green olives and unripe pears come to mind. Long finish which starts with a refreshing bitterness but becomes increasingly nutty.

    "Saca" (something like bottled) of December 2009. very intense, nut, curry, clean and pure, apple. Long, well balanced, voluminous but not heavy, fresh. delicious !!
