From a master class with Etienne de Montille of Domaine de Montille (and Chateau de Puligny-Montrachet), 20th January 2011, Beijing. Appearance: medium ruby. Nose: intense red cherry fruit with distinct herbal and floral aromatics (100% whole cluster). Very complex with oak seemingly playing more of a secondary role. Young. Palate: remarkable structure of very layered coating medium-high tannins, juicy vibrant high acidity, gorgeous red cherry fruit with balanced medium-high alcohol and very good length. Conclusion: De Montille explained that Domaine de la Romanee-Conti, Dujac and de Montille are among those who consistently use whole-cluster to a lesser or greater degree. You need good ripeness and you need to vinify very carefully (as de Montille explained, ‘it took me almost 25 years to understand this. My father was doing 50/50’). De Montille revealed how this decision aids having a long, controlled fermentation. Les Taillpieds handled in this way certainly has a marvellous structure. Still on the young side, to be sure. This will get even better. From 2012 and I would wait a little longer if this was my wine.

From a master class with Etienne de Montille of Domaine de Montille (and Chateau de Puligny-Montrachet), 20th January 2011, Beijing. Appearance: medium ruby, clear rim. Nose: very perfumed, floral – very Volnay-like nose in that respect – with gorgeous red cherry fruit, violets and other highly aromatic notes (with 2/3 whole-cluster usage of fruit here). Oak in the background. Palate: lovely fruit with a robust structure of coating medium to medium-high tannins – de Montille noted that whole cluster can add an ‘extra layer of tannins’ but their texture is less tough if handled properly. He also added ‘this is maceration rather than extraction’ (so no real pigeage - punch down). Medium-high alcohol with excellent length. Conclusion: superb. Approachable now, but still a young wine for sure. From 2012 for better results.

From a master class with Etienne de Montille of Domaine de Montille (and Chateau de Puligny-Montrachet), 20th January 2011, Beijing. Appearance: medium ruby, slight orange rim. Nose: attractive red cherry fruit, quite intense in character with violets and other perfumed notes (1/3 of the wine comes from whole cluster fermentation). Palate: lovely refreshing high acidity, lovely red cherry and cranberry fruit, coating medium tannins (which creep up on you), balanced medium-high alcohol. Lovely structure and very good length. Conclusion: Montille described this as the ‘wine to introduce Domaine de Montille’ (1.6 ha here). Very elegant, very charming. Approachable, but will repay cellaring also to 2013 and beyond.

From a master class with Etienne de Montille of Domaine de Montille (and Chateau de Puligny-Montrachet), 20th January 2011, Beijing. Appearance: pale to medium ruby, slight orange rim. Nose: kirsch-like red cherry nose – Etienne de Montille explaining that this wine was ‘moving forward more quickly than the de Montille Pommard 1er Cru Les Pezerolles’. The fruit here is savoury rather than bright, oak plays a secondary role in the background. Palate: red cherry, but also cranberry and quite ‘tart’ red fruits on the palate with Pommard-like robust structure of coating, high acidity, drying medium tannins. Balanced medium-high alcohol. Quite good length. Conclusion: Etienne de Montille explained that there no use of whole-stems for this wine and that it’s meant to be approachable. He de-stems, but doesn’t crush (so skins are broken by action of de-stemming). This will drink relatively soon, but has the structure to go a little further if necessary (to 2012).

From a master class with Etienne de Montille of Domaine de Montille (and Chateau de Puligny-Montrachet), 20th January 2011, Beijing. Appearance: medium to deep gold. Nose: distinct lemon peel and some of the lushness and richness of Meursault, with some nutty aromas. No new oak here. De Montille explained that Les Poruzots tends to be quite nutty and, consequently, doesn’t need new oak. Palate: medium to medium-high acidity, rich lemon fruit, lush texture (but not fat), nice balance, medium-high alcohol, touch nutty, good to very good length. Conclusion: lovely. Approachable now. Will go well a little longer, if necessary (to 2012, perhaps longer).
